Chicken Rice Wraps

Recently, I was discussing recipes with a friend and she told me about her experiments with rice wraps. She really liked Vietnamese spring rolls, but didn’t like the shrimp. She also doesn’t like bread, and one day, when she was at a deli, she saw something she thought would make a perfect wrap without the bread. She experimented a bit, and ended up with this recipe, which she allowed me to share….

INGREDIENTS:

  • Rice wraps

  • Brie cheese

  • Chicken – cooked and chopped

  • Arugula

  • Crushed walnut or pecan pieces–crushed to about the size of a pea–for texture

  • Balsamic vinegar (optional)

 

DIRECTIONS:

  1. Soak a rice wrap with water and put it on a clean cutting board. A sushi mat works too.

  2. Put the arugula, chopped chicken and crushed walnuts in the middle of the rice wrap.

  3. Cut the brie into thin strips and add one or two to the wrap.

  4. Now wrap it up!
