Healthy French Toast
If you are looking for a healthy breakfast that is easy to make, consider this french toast recipe. I like to add a lot of cinnamon, because I like the taste. I also add a little bit of cayenne pepper, and sometimes some cardamom.

INGREDIENTS:

Bread (Challah, seeded, or gluten free)

Eggs – 2, whipped

Cinnamon powder

Salt
-
Salted Irish Butter
-
Plain Greek Yogurt
-
Maple Syrup
DIRECTIONS:

Whip the eggs with a fork in a container big enough to fit the pieces of bread.

Add the Cinnamon powder and Salt to the eggs and keep beating until they’re fluffy.

Cut one or two slices of bread (about 1/2″ thick) and soak them for a few minutes each in the egg mixture.

While the bread is soaking in the egg mixture, put a few spoonfulls of yogurt into a bowl and add the maple syrup to taste. Set this aside for now.

Heat a pan on middle heat and when hot, add a tablespoon of butter.

When the butter is browning, put the egg-soaked bread into the pan and cook on both sides until the bread is golden-coloured.

Remove the bread from the pan and put it in a plate, and spread the yogurt and maple syrup on top. You can add blueberries or sliced strawberries if you like.
